Cukes: Bitterness Hint from Heloise
I was making a Greek Salad and I tasted the cuke and it was bitter. It was my only one. So I cut it up into salad sized chunks and salted it generously and sat it in a bowl. In the meantime I put together the salad and did a few other things.
About half an hour later I rinsed and dried the cukes and added them to the salad. They were very good! I figured it works for eggplant, why not cukes?

I wish I'd known about this when I was harvesting bitter cukes in the hot summer.

Another trick that works for me
My niece taught me this:
As you cut the end off, take it and rub it against the end of the cuke that you cut it off of. Just a couple of quick swipes. Do the same with the piece ftom the other end ON the other end. I do this first - before peeling.
When she told me this, I laughed at her. It was the dumbest thing I ever heard, but one day (home alone so nobody would see me and laugh) I tried it and it worked. I do this EVERY time now. Haven't had a bitter cuke since.
Don't ask me how or why it works 'cause I don't know. I just know it works for me.
