So last night I have made roast veggie couscous using my own squash and eggplant. I also sprinkled it with garden basil. The basil I have has very strong aroma, somewhat reminiscent of bay leaf, which I like a lot.
Eggplant was sweet (it's the white Graetel kind), and squash was delicious. We thoroughly enjoyed it. For the curious, here is the "schema", can't call it a recipe, since I did it on a whim.

2 small white eggplant, sliced
2 medium squash, cubed
1 large carrot, cubed
1/2 sweet bell pepper (red or orange is best for color), cubed
1 large vidalia onion, cubed
2-3 cloves of garlic, thinly sliced
2 stalks of celery, sliced
1 cup french organic couscous
2 cups of boiling water
herbs, olive oil, salt, pepper, your favorite spices here,
feta crumbs and basil for garnish.

Heat the oil gently over medium heat, saute veggies with herbs until they reach desired tenderness. I prefer them medium soft. Sprinkle with salt and pepper, I added turmeric, because I like my grains yellow.
Add couscous, mix well and stir for another minute. Add boiling water.
Turn heat to high, bring to boil, if not already boiling, and let it boil for another 1-2 minutes. Turn heat to very low, cover tightly and steam until couscous soaks up all the water - a few minutes.
Fluff couscous, turn off the heat, garnish with basil and crumbled feta.

Oh! that sounds so good ! I just might try that on my guys ! but I have some quinoa , I don't think it is the same grain is it? , oh well , I do have some eggplant growing and squash also. Might throw in some of the mint growing , so maybe that will give it a mediteranean taste. I'snt it just so gratifying ?? !! Very well done , I tip my gardening hat to you !

Quinoa surprisingly is not a true grain, but it so yummy and nutritious. Couscous is actually pasta. I prefer the Israeli couscous, YUMMY! Garden (sort of) dinner last night! Dscn1056
