Advise and help needed
This is not gardening related but need help quickly.
Last Saturday my wife went to an all day event out of town. It was Sat. so no problem as we usually have steak, salad and potatoes for diner so I was ready and made dinner. Sunday she spent the whole day getting ready for a week long workshop out of town so I am the chief cook and bottle washer for the whole week. Knowing this I made citrus brazed pork tacos with quick pickled red onions and habanero sauce. It was complicated and took a long time but very good and will go for two days. As I was finishing up the pork and putting it the oven for 2 hours my wife asked what are we having with the tacos? OH?????? uh don't know, didn't think. My wife always plans meals with things that go together and I can cook but have no idea what goes with anything. So my problem for the week is that I don't know what goes with what. Tonight we are having the pork tacos again and tomorrow I am making a Tuscan rosemary smoked chicken that should go for two days, Thursday she is having dinner with the group so I can handle that night and Friday is pizza or brats so again ok. Any suggestions would really help. Only things ready in the garden are lettuce, radishes, bok choy and spinach.

I like slaw or sauerkraut with pork chops, both super easy! Many great recipes, or you can Applesauce is good too.
Tuscan chicken could have spaghetti on the side, or just buttered noodles and some of your garden veggies!

With tacos, spicy black beans or refried beans with enchilada sauce and cheese are good! Realized it was pork tacos....oops!

To go with the tacos I think you can get away with modifying a lime slaw recipe to use thinly sliced bok choy by adding some sweetness to balance the added 'kick' and bitterness that bok choy has over cabbage.johnp wrote:So my problem for the week is that I don't know what goes with what. ...I'd wait for feedback from others before trying it with bok choy
...or just buy some cabbage if you don't want to risk being a guinea pig for my hypothesis (or buy a package of pre-cut cabbage/slaw if available at your local market for faster prep time)

and reducing the recipe:
Combine: 2T mayo, 2T sour cream or plain (not vanilla) yogurt, 1 T lime juice, 1/2 T(?) honey or agave syrup, 1/4t chipotle powder, 1 small garlic clove (pressed or minced)
Give it a taste, see if it needs more sweetness(honey) or zing(lime) or spice (chipotle) - if it needs all three, add 1/8t salt and taste again.
Toss the sauce with: 1 1/2 T chopped fresh cilantro, 2c thinly sliced bok choy, 1 minced green onion

It's got a lot of ingredients, but only 4 require something other than measuring/opening a can (i.e. the garlic, carrot, onion, spinach.) You can substitute Parmesan from a shaker can instead of fresh.

Thanks for all the help, they all sound good. Right after I sent that post my comp. got a virus and shut down. Took it in and am now on the iPad. I make really good cold roasted vegges with herbed yogurt sauce that can all come from the garden (herbs I mean) so that will be one night and I might try the bok Choi as well as the noodles.
