Sweet Potato Chips
Going a little crazy with the 2 days of rain - so I tried making SP chips. In the future, I will make sure they are really thin, and I will peel them first. I think that will help reduce the outer burning. I've eaten over half the batch!

EVOO, salt and what, 450F for how long? Yum!

It called for EV coconut oil but I used grapeseed oil. 375* for 10 minutes on parchment lined baking sheet. Turn for another 10 min and start watching for ones that are getting too dark. Remove as needed.

Yum! I just ate a bunch of store bought sp chips. Definitely didn't appreciate that yucky rancid oil flavor you get from deep frying in vegetable oil. I bet they would be great fried in tallow, which I just happen to have a lot of from our 1/4 grass fed cow. But baked with coconut oil would be great too, and a lot less work and mess!

Yum is right! Sounds tasty. I make SP Fries with EVOO, Rosemary, thyme, S&P to taste. 400F until crispyish, about 18-20 mins. But watch 'em, they burn fast!
