I emptied a 3rd square today, not as good as the 1st 2...I'm really interested on how the center of the bed did.
Just have to wait till I get there...We baked them tonight and the insides were golden, flooded with whole butter they were great, I personally like baked Idaho's best, love thick well cooked skins, you might say crispy..
Next season I'll try some.

I would not bother to peel them, just scrub and bake and eat the skins and all.

Agreed, no need to peel those no matter how you cook them!

Here they are, planted April 1st, no additives other than a quart of compost tossed on each square about 6 weeks ago.
Mel's Mix is so nice to work in, friable, clean, moist, no cracking, just a heavenly mixture waiting to grow something.
Tree roots from last year are not a factor any more so I am back to 1st years success...
These are from 10 squares.

Question...now after get out the potatoes, the MelMix is good to start again? Only adding compost? 
I saw videos on youtube that said potatoes absorb many nutrients, and some mixes need to rebuilt fertility it's the same with MM?

Hi and welcome, Alexandra! Well, according to Mel in All New Square Foot Gardening, and actually from the beginning, once you build the Mel's Mix, all you need to do between plantings is to add a scoop of nice homemade compost from a robust variety of sources. That being said, some of us have had target problems, and may require a different approach. But, yes, for the most part, just take a scoop of compost and put it on the square and plant on!

I pulled potato's in August, let those beds rest a while.
Last week I added 7 gallons of compost, mixed it in a bit and planted a little bit less than 20 squares of garlic at 4 per square..
YES Alexandra...I add more compost than is required. why ? I have it. I have probably 300 gallons ready now....and a pile cooking that should be ready before winter..I'm never concerned about PH, or any other additive. I've become solely dependent on compost and Mel's Mix.
