Re: Round #3-canning Salsa
Thanks camp! I am still learning and will heed your advice.camprn wrote:Regarding not following recipes and substitutions in canning... The recommended type of processing in a recipe should always be followed.
The amount of acid in a recipe should always be followed, this includes vinegar and bottled lemon juice. Do not skip adding these to your jars, especially if using BWB. Do not lower the recommended level of salt. There is a little leeway with the amount of sugar to be added to jams and jellies, but not much. Typically the sugar amount is required to achieve the state of jelling desired. Milk, butter, oil and grains are not to be canned. More information on canning safely, and wisely, can be found in the main canning threads.

canning
citric acid can be added to salsa to aid in preservation...and then there is always the option of skipping the canning process altogether (water bath and pressure cooker) and just freeze your salsa...if you have the room in a freezer.

Songlee
Welcome to the forum.
I would be very sad too. Could be various reasons. Need more information. What did you plant and what was it planted in?

Whoa! Does anyone else see how the 2 prior posts are displayed incorrectly?? My response was placed extreme-vertically in the avatar section, the original poster's question was placed to the right of my avatar.songlee wrote:I planted some vegetables all dead. I'm very sad. %>_<%

I do not see any formatting troubles on my end.
I will clean up this thread later.

I have noticed the Ball Blue book mentioned a few times during the canning discussions. There are a few versions, is there one that is particularly better than the others? Thanks

Yes, always go with the most recent Ball Blue Book. I think the most recent one was published in 2011.Partsgal wrote:I have noticed the Ball Blue book mentioned a few times during the canning discussions. There are a few versions, is there one that is particularly better than the others? Thanks
