Multiplying Onions
Here in Louisiana, especially people from the South part of the state, use green onions in most of their cooking. To us it is basic ingredients. Since I moved to North Louisiana, I started raising, what we call,(don't know the real name), multiplying onions. They don't make large bulbs, just keep multiplying, and are akin to the green onions you buy in a grocery. When the seed stem comes up on onions, what does that do to the onion, I guess from the standpoint of usefulness? In my case it seems like the seed stem is coming up early this year, because of all the warm weather we have had in Feb. I am using them anyway, just pinching off the seed pod. Haven't made me sick yet. I would ask the same question for the bulb type onions.

Fine to eat
The stalks won't make you sick. When onions go to seed the leaves and stalk may be tough, or hollow with not much juicy oniony goodness, but they won't hurt you.
If you have walking onions (as opposed to the ones that multiply like shallots - sometimes called potato onions) you want to leave the seed stalk alone as little bulbils will form at the top. You can eat the little bulbils, or you can plant them, or just let them do their thing, which is falling over and planting themselves about a foot away (the last is probably not the best option in a SFG LOL)
