For a short-term preserving of berries, I tried the vinegar bath suggested; 10 parts water, 1 part vinegar.

On June 12 I picked a quart of strawberries. Having picked another quart the day before, we knew we could not eat them all within a day or two. On June 13th I hulled them first then took those berries and swished them around in a mixing bowl filled with 5 cups of water and 1/2 cup of white vinegar. I swished a minute or two, then drained them in a colander and left them maybe ten minutes to fully drain. Filled a covered container with the damp berries and put them in the fridge with a tight lid.

I opened the container above today and they are fine 6 days later. No fuzzies or decay. I guess I'll be saving all my berries in this fashion in future. I just thought I'd let you know it works.

Excellent, Bea! I use white vinegar for a lot of things but never knew about this. I wonder what else we could 'preserve' with this recipe?

The great thing is it DOES NOT change the taste of the berries

You can do this with any berry. I understand that raspberries can go bad quickly, but won't with a vinegar bath.

I had a big bowl of my strawberries with sugar and whipped cream today. Mmmmm good.

You can do this with any perishable practically. The vinegar acts as a germ/fungus/etc killer so those odd spores that come in with the fruit/veggie get killed and we can avoid premature destruction of the fruits of our labors. Also works for supermarket stuff too of course. Very Happy

We have a fantastic Mulberry tree, guess it would work on mulberries as well, i freeze heaps of them, but would be nice to be able to extend their fridge life a bit.

I saw this on Pinterest and have been doing it with my store bought berries. It's really been a wonderful thing, as by the time berries get down here they are anything but fresh.
