Growing eggplant for the first time this year. Well, I did start some last year, but it didn't do anything before we moved and I now know it wasn't getting nearly enough water. Anyway, after the hailstorm devestation I needed something to fill up empty squares ASAP (too tempting to the puppy) and picked up 2 Hansel and 2 Cloud Nine eggplants at Home Depot. Both of the Hansels are doing great and have a couple ready to harvest with plenty more to come. Cloud Nines just set their first fruit, so not far behind.

I've never eaten eggplant. I've search the site and seen all sorts of recipes and have been collecting some on Pinterest as well. But what should I make first? What would be a good first introduction to eggplant. Sure hope I'm going to like it, as it seems to LOVE my climate now that I've added the drip irrigation!

I like to slice it length wise, the whole length of the fruit. Slice about 1/4-1/2 inch thick and pan roast it with a little oil and salt 'til it's a little crispy. Soo good, I can hardly wait for fresh eggplant!

Eggplant loves oil and soaks it up like a sponge, so I use a nice olive oil.

You can also grill it. There are a lot of Turkish and Mideastern recipes that use eggplant, or aubergine. Delish! Very Happy

I am jealous of such a situation. It is hard to grow here. I asked my hubby for introduction to eggplant suggests and he also suggests grilled slices. Probably the most familiar is eggplant Parmesan. I love ratatouille and moussaka.

Here are the 2 eggplants I picked today, along with 2 cukes that TOTALLY hid from me until it was too late.

ETA: I loved up the variety I got and it seems it's a good one. It's called Hansel and the fruit can be picked any time from 2-10 inches. I've got five more form on each plant and tons more flowers.

Update: I had Eggplant Marinara tonight and it was quite yummy. Next time I want to add mushrooms. The recipe called for "Italian seasoning" and I used my homegrown basil (fresh) and oregano (dried). I'd love to be able to make it with my homegrown tomatoes as well if I could ever conquer the diseases that so plague them.
