I'm trying to find ways to prepare produce from the garden without being wasteful...my jalepeno peppers plants (four) are loaded down...poppers sounded really good for a football weekend.
From what I've seen, my mucho nacho plants and peppers are blowing away everything I'm seeing at the local farmers markets...they must love Mel's mix and the cooler weather.

WOW! Did that photo ever make my stomach rumble. Those are beautiful? My jalapenos are mass producing now, too. Would love the recipe.

slice the jalapenos in half long-ways and scoop out seeds (be careful and maybe wear gloves).
mix cream cheese, shredded cheddar, and bacon bits in a bowl and fill pepper halves (shape to look like a full pepper).
dunk in milk and roll in flour.
let dry 10 minutes, then dunk in milk again and roll in bread crumbs (I used Panko).
deef fry until golden brown...cold probabaly bake instead....maybe dip in a ranch sauce (something cooling in case you get a really hot pepper).

If your peppers are really hot you can parboil them for a minute or so and it will take some of the heat out.

Its the white stuff and seeds inside the pepper that makes them hot. Dont touch anything else while you are cutting them, deseeding.

I just found a recipe for jalapeno popper dip...probalby tasty with much less work...I'll post when I have time.
