There was something on cable news last weekend about this. Only they took it one step farther: more and more restaurants are buying the compost back for their own on-site (at the restaurant) vegetable and herb gardens. They showed one chef who has to climb a ladder to get to his flat roof-top gardening boxes.
We better get a news team out to Martha's restaurant in Acton, Massachusetts. She's way ahead of the curve! She's been growing veggies and herbs in her SFG gardens outside her restaurant for several years now.

There's a fancy restaurant/hotel in Vancouver, BC and also in Toronto, Ont. that have been doing this for several years.

It is in fact true - we compost at the restaurant and I SFG at the restaurant. This year my goal is to get the entire area on the garden side photo-worthy and have a photo on our web-site showcasing SFG.
Last year I was thrilled with my garden, but had back problems early in the season, so a lot of the artistic impression was beyond my control.

I don't think we care about the aesthetics of your SFG, martha. I think we would love to see the layout in spite of. I think several of us could put the "imagery" to good use going forward in our own places of work. It would be quite inspiring to see a restaurant going SFG and composting.
Could this be the end of the $3.99 side salad? Let's hope.

How about a "salad bar" where you go out, pick whatever you want, wash it, then eat.

I think it could be a fun tease for her regular customers to stop by frequently to see if their favorite veggie is ready to be harvested yet. They could get 'dibs' on a particular tomato when it was small and watch their tomato grow.
