Hi, Marci! Welcome to the forum from Ohio! Spacing for Celeriac is not in the ANSQFG, but there is a good thread on this forum regarding Celeriac spacing that you might want to review to see what other suggested:

Re: How many celeriac per square foot
@ Marci
I live at the west end of the M4 , celeriac don't like frost .
My last frost date was this weekend but I'm still watching out for a cool late May frost or below 3 oC which will wreck them if they are not fleece covered at night same with my runner beans and French dwarf beans etc.
I've planted out my celeriac seedlings ( Saturday ) at one in the middle of each square foot square as they can grow to around 9 inches across if you are lucky .
I'll also be sowing a successional crop in another 10 days as I want to take them right up to the first frost date then lift them and store them as whole roots , also blanch them & freeze . Cook & mash some with potatoes , potatoes & rutabaga & also sweet potatoes then vac pack , heat seal them for freezing .
We've been eating them for a couple of years and discovered that they freeze well when cooked & mixed with other things. The blanched ones go well as five or six inch cubes in a six pint stew or four or five whizzed up in a lot of home made soups.

Thanks for the info on celerian
Hi, Dave,
So nice to get your advice and storage/cooking suggestions! Thank you! I havent grown mine from seed...bought them as plug plants from Primrose nursery. I have a mini greenhouse so they are in soil, protected at night with doors open in the day. They seem to do well. I have no idea what size they will grow to become but i will probably plant 3 three per sq foot. I have a raised veg bed and it is already looking crowded (i went kind of nuts with fennel bulbs).
I love the flavour of celeriac, especially grated raw with Dijon mustard and mayo! Very french!
Thanks again. Best wishes,
Marci

Re: How many celeriac per square foot
I think 3 per square foot will be too close . Check out the ones on sale in the supermarkets like Tesco , Morrisons etc they are usually 6 to 9 inches in diameter . Can you plant them out in cheap B&Q plastic buckets with drain holes in the bottoms ?
Remember if you are using " Mels Mix " as per the All New Square Foot Gardening methods aka MM or Mel's soil less growth medium and it's well made you can expect some fantastic sized veg out your veg beds so long as you keep the hydration levels right .
I know how annoying it is to run out of veg space .. I have 250 square feet plus ( se the pictures in the gallery ) and could manage with another 300 or more as I want to grow tomatoes & all manner of other veg outside for pressure canning .
