Not a black and white answer since the fermenting temperature is different in people's homes.  Basically Warmer = Faster fermentation.  So 68 degrees is a rather cool temp so for example and I would start tasting around 3 weeks.   At 75 degrees I would start tasting around 2 weeks.  Do you have pH test strips or other method? The strips help but its not a perfect test either. Some people never use strips and go completely on taste testing.

Also,  people say you need a few weeks for full development of all the yeasts and good bacteria.  The liquid supplied to you was very strong  sooooo,  my bottom line answer?  Sure, you could try it at 2 weeks.  If you wait weeks and weeks like I often have, you can always dilute it back a bit if its too strong. I don't care how strong it gets, that's my personal preference.

Rainy drizzly foggy day today,  perfect for bottling up the next batch of Kombucha for the 2nd ferment. I'm starting to feel more comfortable with it now and so I did a variety of flavors - pineapple ginger, vanilla peach and grape: Kombucha - Page 2 Img_2012
That's water kefir fermenting in the jar on the right.

Has anyone made candy out of the extra scobys? Seems kinda weird to eat them.

I used her method #2 and it was ok.

Can't say I love it so much to do it a second time.  I use my neighbors raw honey and rather use the honey for things I love.

I did make scoby skin cream with essential oil.  Come to think of it I need to pull that out of the refrigerator and use it again.

As far back as I can remember, Kombucha has always lived in our house. This is insanely delicious and I am very glad that it is now a popular drink.
