Limp Carrots Empty Limp Carrots

I have been lucky some years and grown some good carrots. My problem is that once I harvest them, they get limp within a short amount of time. What am I doing wrong? What do I need to do right so I can store them for longer than 1-2 days?

Take off the tops but leave 1/2" or so , wash them free of MM or soil ,  pack unpeeled in vac pac heat sealed bags with a table spoon of cooled boiled water in the sealed bag
 
If you want to peel and turn them into discs or carrots baton  do it and add a bit more cooled boiled water, then vac pack and heat seal.

For grated carrots add a heaped teaspoon of sugar ,sprinkle it over it , pop it in the bag asap after grating it up  and add a dessert spoonful of cooled boiled  water .

Once sealed gently tumble the bags in your hands to spread the liquids all ove the carrot etc.
 
They often keep for 10 or more days in our fridge like this as do lots of other suddenly ready to harvest veg .

 OR
 
Stand them minus the tops in a jug of tap water in the fridge change the weater every other day .

 OR/ALSO

Check that the lid is on the " crispator" veg drawers of the fridge and that the vents on the drawer front/s are closed if you have one of the moisture free fridges that never need defrosting , for these type of fridges fair suck the water out of things in the fridge.

They are held back in " shoP condition " ..... that is good for a shelf life of about four days using temperature , humidity and inert gas atmospheres such as nitrogen or CO2 using a computer to do it in the controlled cold storage

Nitrogen &/or CO2...  Hmmm.... well, I suppose it could be worse - like how they ripen banana!
