Cucumber Half Sours
Has anyone every tried making cucumber half sours similar to the appetizer served at Ted's Montana Grill? I tried a batch and they taste pretty good...something different. Peeled cucumber chunks are soaked/ fermented in a seasoned brine solution...no vinegar...an old Jewish recipe I found on the internet. I only soaked mine in the fridge for a couple of days...the recipe calls for the cucumbers to set out at room temp, submerged, and fermented for up to a week...didn't want to mess that all that.
Cucumbers are coming on strong...almost daily...need some more recipes to use them. So far we make cucumbers and onions with a little sour cream and sugar, pasta salad, and pickles.

Do you juice? They're very good in a juice cocktail with carrots.
Last year I had a surplus of carrots and tried a lot of different recipes. I learned and started juicing as another way to use them. I can't wait for my cukes to come so I can juice some and pickle some.

I gave our juicer away last year...carrot juice was really good, but it was a total pain in the butt to clean the machine afterwards. We've also started to eat cucumbers on sandwiches and in wraps.

I put one in my smoothie yesterday, it really gave it a good flavor! The Vitamix is a snap to clean up too! Maybe a minute? We have one smoothie a day, and love them

Try a cucumber sandwich. I still remember as a young child listening to my mother eat her cucumber sandwich and hearing the crunch everytime she bit into the sandwich. She put mayonaise and salt on the cucumbers between two pieces of bread.
