Baked Cabbage Recipe - as requested
I am NOT a cabbage person. DH is. I think I made cabbage for him twice in our first 15 years together. Then I found this recipe.
Enjoy!
Mrs. Howard’s Baked Cabbage
4-5 cups coarsely chopped cabbage (small cabbage)
2 tbl butter
2 tbl all-purpose flour
1-1/2 cups milk
1 tsp salt
2 cups (8 oz) shredded longhorn or cheddar cheese
½ cup cornflakes, crushed
Cook the cabbage in a small amount of boiling water in a saucepan until tender, drain. Melt the butter in a saucepan and stir in the flour. Cook for a few minutes, stirring constantly. Stir in the milk and salt. Cook until thickened, stirring constantly. Layer the cabbage, white sauce and cheese in a baking dish. Sprinkle with the cornflakes. Bake at 350 degrees for 15 – 20 minutes.
Changes Mike and Marie have made
Reduce milk to ¾ - 1 cup
Mix it all together rather than layer it.
Cheese to taste (We're cheese-heads, so we add more)
Sprinkle 6 slices well-cooked, chopped bacon over the top.
Have tried it using corn or rice Chex when out of cornflakes. Cornflakes are better.
Don’t know who Mrs. Howard is. Recipe is from a cookbook my mom’s sorority put together.
