Dried Apple Snack, a review

If you have the Ball Blue Book(peaches on front cover), see page 114 and Dried Apple Snack.  Robust flavored apple pie slices, dehydrated and no fatty crust.  Full sugar and spices though.  Have to limit myself this is absolutely  Terrific Stuff.
Easily beats out fruit roll ups.  

Hint - halfway through the dehydrating time turn over the slices and it will hardly stick to the trays when its finished.

Yes, Apple slices, Asian pears, firm peaches, firm bananas dehydrated make great fruit snacks. I toss the banana slices with fresh lime juice and the others with fresh lemon juices. I'll have to check out the Ball book.

I know this is an older post but does anyone have this recipe or one they would like to share. Apple picking season is almost here and my mother in law has offered my her old dehydration. I want to make sure it works with a yummy recipe. Thanks,

I just happened to have my Ball Blue Book sitting right here.  So here is the recipe that Llama Momma referenced on page 114

Dried Apple Snack
Makes about 4 cups

3-1/2 pounds apples, peeled, cored and sliced
Ball Fruit-Fresh Produce Protector
2 cups granulated sugar
1 cup brown sugar
2 teaspoons cinnamon

Pretreat apples with Fruit Fresh by dipping.  In a large bowl, combine sugars and Cinnamon.  Drain apples.  Toss apples in sugar mixture.  Dry at 130F for 21 hours or until pliable.  Apples must be turned halfway through the drying process.
Dipping
Dipping is a pretreatment used to prevent fruits such as apples, bananas, peaches and pears from oxidizing.  Oxidation is the process that causes fruits to turn brown and lose some Vitamin A and C when exposed to the oxygen in air.  Common antioxidants are Ball Fruit-Fresh Produce Protector, lemon or lime juice and ascorbic acid.

Ball Fruit-Fresh Produce Protector is a blend of ascorbic and citric acids.  Dissolve 2 tablespoons in 2 quarts of water.  Hold produce in solution for no longer than 30 minutes.  Drain before drying.
or
Lemon or Lime Juice are the most natural pretreatment.  Use 1 cup juice to 1 quart water.   Soak fruit no longer than ten minutes.  Drain before drying.
or
Ascorbic Acid, also known as Vitamin C.  Dissolve 1 tablespoon ascorbic acid to each quart of water.  Hold produce in solution no longer than 30 minutes.  Drain before drying.
