ummmmm, no but I did fortify my coffee with Kahlua and Baileys. Anyone have any recipes for "groundhog"? 433311 I can still type so I think I am okay.

From the Florida Cracker cookbook ...

Baked Groundhog & Taters

1 Groundhog
Cold water
Salt
Pepper
Sweet potatoes or white potatoes
Cornbread

The animal should be dressed as soon as possible and well soaked for several hours in cold, salty water. All excess fat may be trimmed off after the meat is cold. Parboil to remove and remaining fat and drain well. Place in a moderate oven and pack sweet potatoes or even white
potatoes all around. Salt and pepper the meat and bake unti brown. Be sure the potatoes are thoroughly cooked. Serve with cornbread and use the heavy gravy that forms during baking.

Groundhog Pie

1 groundhog skinned and cleaned
1/4 cup onion
1/4 cup green pepper
1/2 tablespoon minced parsley
1 tablespoon salt
1/8 teaspoon pepper
4 1/2 tablespoon flour
3 cups broth

Biscuits:
1 cup flour
2 tablespoon baking powder
1/4 teaspoon salt
2 tablespoon fat
1/4 cup milk


Cut groundhog into 2 or 3 pieces.



Parboil for 1 hour.



Remove meat from bones in large pieces. Add onion, green pepper, parsley, salt, pepper, and flour to the broth and srit until it thickens.



If the broth does not measure 3 cups, add water.



Add the meat to the broth mixture and stir thoroughly.



Pour into baking dish.



For biscuits:



sift flour, baking powder, and salt together. Cut in the fat and add the liquid.



Stir until the dry ingredients are moist.



Roll only enough to make it fit the dish.



Place dough on top of meat, put in a hot oven (400 degrees F.) and bake 30 to 40 minutes or until dough is browned.

Hey, Acara, I think somebody stole my 'possum recipe! (Except I added a last line to it, - "remove pan from oven, throw away the 'possum, and eat the taters.") Smile

My dad used to embarrass me to no end when I had friends over for a sleepover. Mom would cook sausage for breakfast and Dad invariably told my friends we were having ground hog patties.

didn't see this last night but Kahlua in hot chocolate would probably be great. Gotta remember to try that on cool nights on the sailboat.

Irish Cream in Hot Chocolate is my favourite. I get the big bottles for cheap too! My brother is a long haul truck driver and he stops at the Duty Free for me. Very Happy

I shot myself in the foot last night (fig) .....

Since mama's on bedrest, I'm doing all the cooking. I made churrizo-stuffed portabello mushrooms for dinner & once mama took a bite, I told her it was possum (mama's born & raised in Long Island, NY ...... and unfortunately married a Florida Cracker).

This is one of those things that you will, eventually, laugh about together....

I just relayed this story to my dh. His comments: A) The only reason you are still alive is that she can't get out of bed. B) Ah, possum, the other white meat.

I have a customer/friend who goes to Mexico a couple of times a year and brings me back Kahlua! it's awesome. I mix Kahlua and Baileys because I find the straight Irish Cream too sweet.

Only on the SFG forum would we find a single thread which includes not only a discussion of the proper mixture of Bailey's Irish Cream and Kahlua, but also has recipes for possum and groundhog.

(Is it any wonder projectile vomiting managed to creep in as well?)

I would agree that you are lucky to be alive, very lucky to still be married and wondering when you get to sleep in the bed again, or if you're thinking of a futon since you'll be on the couch for a while?

I offered my new girlfriend some of my homemade deer jerky.
As she is chewing, she asks "So, what part of the deer is this?"

"That's the prostate gland." I said, deadpan faced.
(I couldn't help myself, it was actually a round roast or similar cut.)

The mind is a powerful thing. I haven't had that kind of reaction to my culinary delights before or since.

I had deer for the first time yesterday...it was very good...I've decided enough garlic and butter makes anything taste good. As I was chewing, hubby whom I had shared this thread with asked me how I liked the ground hog...we had a good laugh.

put some spice bush twigs in.yum. roast after par broiling. render the fat and use it for a base for herbal salves. tan the little hide and make a medicine drum. clean inside of all mucus membrane with a dull edge like a butter knife. soak in hard wood ash in water solution-careful caustic. should be able to float an egg in solution so a quarter size to 1/2 dollar size bit of egg floats above water. soak 2-3 days gently slip the hair out. rinse. work over an square edge like a chair back til dry. smoke the hide. clothes pin the hide into a bag with an opening. sew opening to denim skirt or wide pant leg. create a bed of embers, put punky wood on top til you can hold hand one inch above fire-lots of smoke! hang hide a ways above fire and drape skirt around fire. baby sit closely as whole thing can go up in flames if fire gets too hot, add more punk as needed. smoke about 30 -45 minutes turn inside out. repeat
