Rescued pickles

I made 6 pints of bread & butter pickles that shriveled up & looked awful. Instead of trashing them, I decided to make pickle relish out of them. So as to not ruin my "flats" & ruin the seal for future use, I put the jars in a pot, covered with water & heated them til the seal broke on its own. Then I drained the liquid into a separate pot & heated to a boil, plopped the pickles in my food processor & chopped them. They were already nice & hot, so I just re-filled my jars & poured the boiling liquid over them, put lids back on & did another water bath. They all sealed just fine. At least it wasn't a total loss. I needed sweet pickle relish anyway since I use a lot of it in potato salad & make hot slaw almost weekly.

Way to go, Dixie! I love it when people make lemonade from lemons, or in this case, pickle relish from shriveled pickles.
