Brussels Sprouts with Bacon and Dried Cranberries
This is one of my favorites recipes. The dried fruit seems to temper any bitterness of the sprouts. (You can also use golden raisins instead of cranberries, but I like the red and green colors in the holiday season.)
1/2 lb. bacon
2 lbs. brussels sprouts
salt and pepper to taste
1 c. dried cranberries
1 c. chicken broth
1/2 c. water or more
Chop bacon and fry in large skillet until crisp. Remove bacon. Cut large sprouts in half, lengthwise. Add sprouts to skillet and saute until golden brown. Salt and pepper to taste, and add cranberries, broth, and water. Simmer until sprouts are tender, adding more water as needed to keep from sticking. Top with bacon before serving.

While I was out of town recently, my wife ate nearly all of the sprouts that I have left. She said she needed some comfort food. Don't most women eat chocolate for comfort food?!
Anyhow, I hope to try this recipe out this weekend. It will be my last BS harvest of the season! :tiphat:
