I made some gazpacho with some of mine! and my hubby likes to takes slices in his lunch with baby carrots and sugar snaps.

Half sour pickles - spears, thick slice, or whole, depending on the size of your cukes. There isn't anything better than those, and this slight fermentation is also good for your health. Look up recipes online.

I posted two freezer pickle recipes you might like to try. I've tried it with pickling cucumbers as well as burpless and slicing and they all work well. I take these to church dinners and they are always eaten up fast!
