Pasta salad

This is really refreshing, sweet-tart. I always put more veggies than what the recipe calls for & I would imagine zucchini could be added.

Curly Pasta Salad

1 box curly pasta, cooked according to package directions
1/2 C salad oil

Dressing:
1 1/2 C red wine vinegar
1 1/2 C sugar
1 tsp salt
1 tsp black pepper
2 tsp prepared mustard
2 tsp parsley (dried flakes are OK)

Veggies:
1 medium onion, diced
1 medium cucumber, diced
1 tomato, chopped
1/2 C bell pepper, chopped

Cook pasta and drain, put pasta back into pot. Pour oil over, stir lightly & drain & place into large bowl.

Mix together dressing ingredients (I use a blender). Add dressing to pasta & veggies. Mix well & chill. I don't like to make it the night before, it's still really good, but seems to have a slightly starchy taste to me, but if you are going to make it the night before, only add the onion & wait til serving time to add the other veggies.

It's almost to "die" for. I inhaled at the wrong time & got choked on the vinegar dressing. It was one of those chokes where your throat closes off & you can't breathe. Great fun, but it was worth it.
