Re: What are you eating from your garden today?
We've been eating deserts made with rhubarb as well as salsa made last year with tomatillos, peppers, onions from the garden plus other ingredients. The canned salsa has worked out very well. Only I eat it because Mrs TD finds salsa to be too spicy for her taste.

First ever fresh out of the garden Watermelon! We've been getting a lot of rain, Now I'm not complaining but when I checked the garden I saw one of my watermelons had split open, I planted Crimson Sweet ( 20 to 25lbs at maturity) and I had trained them up on a trellis and was worrying about them, Well anyway it came in at just over 4 lbs. it was desert last night and it was soo good.

Re: What are you eating from your garden today?
For lunch yesterday, escarole (w/sausage and cannelini beans)
For dinner last night: edible chrysanthemum greens and Tokyo bekana (sort of a loose-leaf napa vegetable, new for me this year - will grow again! And more of it!) in beef sukiyaki. We're also going to pretend I used one of my green onions, too (instead of realizing I forgot it and being unable to convince myself after hours spent in the garden, to change my sore, sniffling (allergies) self back in to muddy jeans and muddy boots and go out again.)
Breakfast - bolting Arctic King lettuce in a huevos ranchros-ish salad.

Re: What are you eating from your garden today?
Kale (chips!) and several kinds of lettuce.
I'm excited 'cause my first attempt at growing kale and lettuce, last year, failed miserably. A few weeks ago, I transferred all of the viable "greens" seedlings - assorted kale, lettuce, Swiss and beetroot chards, orach, and broccoli - from their winter sowing containers into the kiddie pool originally prepped for garlic and shallots (none of which survived the winter freeze). The plants are thriving, in spite of the recent heat wave, and show no signs of bolting.
The kale chips were especially delicious - even my husband liked them, and he's not a fan of kale!

Yesterday harvested some snow and sugar snap peas for some beef stir fry. Went out again this morning and got enough for a snack to bring to work!

Re: What are you eating from your garden today?
OK, walshevak, what do you mean "pulled some tender tops off"? I have lovely Egyptian Walking onions, some have bulbils and some are still just growing...new to me. Judy sent me some, and they are doing great! I just don't really know how to use them, I want them to "walk" so I get more...walshevak wrote:cuke, yellow squash tonight, and I pulled some tender tops off my Egyptian Walking onions to add to a stir fry for lunch.

Re: What are you eating from your garden today?
For our lunch today I had to do something with the garlic scapes. I harvested some from the SFG (there are still lots left) and chopped them up. To that I added some chopped multiplier onion from the SFG. I then sautéed the scapes and onions in olive oil. When ready I poured in lightly whisked eggs and scrambled them together with the scapes and onions. When served, we added freshly ground sea salt and pepper to taste. We ate this with hot buttered toast. A very simple recipe but it was good.

This is a first for me, a smoothie with a Muncher cucumber and frozen orange juice cubes. There are 7 more Munchers in the frig and more ready to pick on the vines. We were trying to eat them up in salads but impossible.
Re: What are you eating from your garden today?
Baked Potato and English Shell Peas. No corn tonight. My grandson didn't eat his corn last night and his mom asked him why he didn't eat it. He said we have had so much of it lately that he was tired of eating it. Guess I better just freeze some for awhile.

Re: What are you eating from your garden today?
Sugar snap peas.
No photo op....ate them while watering so none made it into the house.
I sure wouldn't mind getting sick of corn and having a Muncher cuke in my smoothie.

Re: What are you eating from your garden today?
Okay, I have cucumbers, Squash and tomatoes coming out my ears. I know what to do with the tomatoes and squash. But have not found anything worthwhile to do with the cucs. How are they in smoothies. My daughter does smoothies so I thought about using my mostly seedless cucumbers, pureeing them and then freezing in ice cube trays and then sealing in my Food Saver. Will this work for smoothies??????????sanderson wrote:
