Roasted Pumpkin Seeds Empty Roasted Pumpkin Seeds

I always roast the seeds from pumpkins.  Simply remove them from the pumpkin,  DO NOT WASH,
sprinkle with sea salt and dry in a low- about 150-200 degrees- oven until crisp.  Sometimes I add savory seasoning, but I decided to experiment to make a sweet snack.  They turned out so delicious I had to share it with everyone.  I put the unwashed seeds (I had pre- roasted them for 50-60 minutes) in a bowl and sprinkled brown sugar over them.  Then I added agave nectar and stirred until the seeds were well coated.  Placed them back on the roasting pan and cooked about another hour or so.  Stir often.  This is really sticky, but as it cools it hardens.  Let seeds cool completely and then break them apart.   They were so good, I'm on my way to buy more pumpkins from the local pumpkin farm.  I didn't waste the pumpkin.  Cooked it up and put it in the freezer for pies.

great timing .. your post. I was just thinking of cutting into another winter squash and was thinking of roasting the seeds that I do not save. I like the sweet concept and recently saw a recipe that included sweet and salty and cinnamon and ginger...
cover all our food cravings.

It has been a long time since I roasted the seeds. Some of these have huge seeds though. I must do this with the next one. Thanks for the reminder.

Yesterday I steamed, pureed and froze 4 sugar pumpkins for my thanksgiving pies and breads. They had such nice seeds in them I just had to roast them.

I washed the seeds and soaked them in salt water for a few hours. Drained and carefully dried them in a preheated 170 degree oven. Shut off the oven and opened the door. I shook them up occasionally to keep them from sticking together. Once they were dry I tossed them in olive oil and a little more salt. I made one tray with just salt and the other I added Chipotle powder and put them in a 325 oven for 45 minutes. Stirring occasionally to keep them from sticking and burning.

They are so good, I'd forgotten how yummy roasted pumpkin seeds are. The Chipotle gives them a nice kick if you like a little spice. I like the sounds of the sweet recipe CRICKET, I may have to pick up a few more pumpkins.

this is great... I have been reading lately all the incredible nutrients in roasted pumpkin seeds... or which other squash are also a part of...

More nutrients for the long winter.
