Spent the morning in the kitchen, making a couple of recipes from How to Cook Everything.

Slow Cooked Green Beans (green beans from the garden)

and

Curried Eggplant and Potatoes (eggplant from the garden)

Right now, for lunch, I'm eating Hot Corn Dip with an anaheim pepper from the garden taking the place of the jalapeno.

I've cleared (and consumed) one square of radish, and this morning harvested my first spinach leaves to go in my salad for lunch. Don't worry...I didn't steal too many. We're still cold up here so things are slow. It's amazing to hear how many things are already ripe for many of you!!

Here's my Box#1 - right before I snipped off some of my spinach leaves.

I am going to have a salad from the garden, got some lettuce (mostly buttercrunch, yum) with spinach from the garden, and some champion radishes, I have also been eating cherry belles (and had enough to share) for the last few weeks. Then I am going to make some spinach and artichoke dip! What are you eating from your garden today? - Page 18 959632

Breakfast of Gardners:
What are you eating from your garden today? - Page 18 100_0012

Then I was searching for the carrots I planted in March and had to cut a bunch of swiss chard, spinach, kale & cabbage leaves to make room for the sun to hit the carrots. Didn't have my colandar with me so I shoved those leaves in my mouth to get them out of the way. Wink Uncooked chard tastes a little soapy to me. tongue

Also shared 3 strawberries with those little rolly polly bugs.

That was my breakfast today.

We may hit 70 this Friday! What are you eating from your garden today? - Page 18 53366

Lunch - lightly sauteed 1/2 unsalted butter 1/2 olive oil, garlic, slices of the first Kohlrabi, first swiss chard, and first beet leaves with a side chunk of parmesan cheese. Wonderful. Someone said you can eat kohlrabi leaves. Raw it was too intense for my liking so I didn't cook it either. The bulb part of kohlrabi, raw, was like a very mild radish. Sauteed it tasted like a mild and sweet broccoli. Overall a wonderful and mostly fresh lunch!
