Where do I start?

Where do I start?
It all started: 2 years ago I was gifted 2 precious chicks from a friend who knew I wanted my own chickens. I talked my hubby in to a dozen because what was the point of going through all the chicken work for 2 eggs a day when we have 3 growing boys and a daycare. We are now up to 14 hens and 1 rooster I traded some and added new chicks last year and are hoping to add some that our chickens have laid and are sitting on..
The chickens have opened up a whole new world for me and being more self sufficient in the feeding my family with our food is becoming a fun hobby/obsession. Each year my garden gets a little bigger and this year my hubby is building me a greenhouse, which I hope to start plants and plant my last planting inside the green house to have a longer growing season.
So of course now I am on to using my chicken poo for my garden, I use pine shaving for the coop using what someone told me was the deep litter method and that it would help insulate the floor of the coop... and now it is almost time to clean that nasty out. I went in there the other day to stir up the flooring and it is pretty wet compared to last winters mess.
Where do I start on composting this and reusing it. Can worms help do it faster? I shovel it in to my hubby's bucket on his tractor and we pile it in the field and then come fall he added the leaves that fell. I ran my rototiller over it a couple times but I don't know if it will do anything because it is so massive. Every compost thing I have found is on a very small scale basis so I don't know what is the best way to do this.
I am hoping that this year I will have at least 80% of the fruits and veggies we will consume in our back yard but doing it all organic and no pesticides and learning as I go. This poo could really be a vital asset to my newly growing farmette.
Any help would be greatly appreciated!

Re: Where do I start?
I can tell you pine shavings take a while to break down. I do several totally different compost piles. Most of my shavings, straw, leftover hay and alfalfa, go into your typical farm heap along with manure I clean out of the pens with the tractor. This is all piled up and allowed to let nature take its course. I'll turn it once or twice a year with the tractor. Most of my garden compost, I still use the same items, plus leaves, food scrapes, coffee grounds, etc. etc.
