I don't usually have a whole lot of time to make dinner, and I don't believe in boiling most foods. So this is my collards recipe:

Step 1: Crispify your Pork Jowl (bacon, pancetta, etc).
Step 2: Add your onions and garlic.

Step 3: Chop and add your collards.

Step 4: Add 1/2 cup of white wine, a pinch of sugar, and enough water to just cover the collards.
Step 5: Keep on high heat until the water is reduced to a nice glaze on the collards (20 minutes).

Step 6: Serve and enjoy.

I love the format of your recipe. Seems easy enuf.
If I get some collards growing this year, I'll have to try it.
I've never eaten collads before.

They definitely can be an acquired taste. But with a mature palate, they are delicious.

Oh I love collards! And as far as healthy, they are neck and neck with kale. But my collards never look like yours, Cindre. I do cut and come again, eating the tender young leaves from the outside of the plant, so they never get to head up like that. I'll leave a few to grow bigger this year and try that yummy recipe. Thanks!

COLLARDS..... now you're talking my kinda food and yours look fantastic, both before and after cooking. I will give your recipe a try first chance I get.

I just watched a new Growingyourgreens on utube and his suggeston was to use collard leaves like tortillas and pita bread.
Put your filling on the leaf and roll it up. Voila, a healthy sandwich without the carbs. I can see that being done with kale as well.

I know a gal on a diet and she does that with large lettuce leaves. Puts her tuna or egg salad on a couple leaves of lettuce, rolls it up , and its a sandwich.

Just thought you'd like another way to eat your Collards.

Collards really get a whole lot better after a frost and we start getting hard frosts around January. So I avoid harvesting them until then.
