Canning Safely

I read a few posts about canning safety. It really isn't hard. You just need to follow some easy steps. I can and freeze. The advantage to canning is you can just open a jar and cook without defrosting and you don't have to worry about power outages. This link to the National Center for Home Foop Preservation is considered the bible for safety guidelines. http://www.uga.edu/nchfp/ They have a free online course. One of the main things to remember is there are canning recipes and cooking recipes. Only use approved canning recipes.

Thanks for posting this. I've always wanted to learn how to can and preserve. I just may order those DVD's. I want to grow my own veggies and can them too! Canning Safely Icon_biggrin

I have the recipe book from them "So Easy to Preserve" . It is most of the recipes on the website. They have free videos and instructions. If you follow the instruction they provide you will know your food is safe to eat. I had my canned green beans and stewed tomatoes tonight along with some fresh caught crappies.
