I looked while preparing dinner tonight and couldn't find anything on green beans. It's a very basic dish, but I thought something should be in here. There are plenty of ways to cook green beans....Sauteed, steamed, stir-fried, etc. I seem to choose the quick ways.

Tonight's was SUPER easy! So, I'll share in case you are like me....don't really like beans but know how good they are for you AND how easy they are to grow in summer.

I went out to the garden tonight and picked them within 30 minutes of tossing them in the pan. I washed them off with cold tap water. Cut the ends and put them in the fridge until I was absolutely ready. I had about one cup of green beans.

I went downstairs and grabbed the baby potatoes (Yukon Gold) I had curing in a brown paper bag. I quartered them; probably another cup's worth.

I tossed a couple pats of butter in a frying pan on medium high heat. Once melted, I put a couple pinches of salt and pepper in the pan and tossed in the potatoes and green beans. Obviously, I kept stirring. The cooking process took about 7 minutes while constantly stirring.

When done, I moved them to the side of the stove, off heat, because they will continue to cook for a little bit longer.

On the plate with my pulled pork sandwich, and I've NEVER had a better side dish containing green beans. I am finally enjoying bush beans and have been growing them for at least 4 years now.

One of my favorite ways of having green beans - with potatoes - and to have both fresh from your own garden - heaven! It looks great. Darn, I wish my bush snap beans had done better! I didn't get a harvest from them - they actually formed pods, but the pods were short and filled out with beans before they got long enough for "snapping." I plan to try again for a fall garden, though!

Wish I had a plate like that in front of me right now, though! Yummm! Sauteed Green Beans.. 959632

I like them sauteed in olive oil with garlic and toasted slivered almonds....

toast the almonds, remove from pan
heat oil in same pan used for almonds, saute garlic for a few minutes (I go by the smell) but don't let it brown
add beans (could blanche them first, I guess, but I don't)
cook until almost crisp/tender, return almonds to pan and finish

(green beans almondine? maybe if you want to do a search)

PS. for an asian flair you can use canola oil with a splash of sesame oil added (ratio to taste, pure sesame is too strong for my liking)

Thought I'd toss out another we fired up yesterday with friends. I had about 2 lbs of fresh beans that I needed an excuse to get rid of.

1 chopped onion
1 small package of uncooked bacon
2 lbs cut green beans
6 or 8 oz of chicken broth
1 stick butter

give the onions, butter and bacon a head start in a frying pan on medium high heat. drop the rest in and cook for 10 minutes or so, stirring occasionally.

OMG YUM!!

You guys are killing me..I can almost smell this food!

My beans are coming along nicely but not ready yet...I'm about a month behind you I would guess. My snow peas just petered out.

I want to make dilly beans with mine...I love pickled green beans...can't wait!

Thank you. I only got 6 family size servings of green beans before they quit. I just planted another variety (300 of them). When they come in again, I'm going to try this, It sounds right up my kids alley of likings.
