It's not red, really. I have two that got more mature... they are bright purple all over.
Question: How do you know when a bean "crosses over" from what I'd call a string bean (where you eat the whole bean, pod and all) and when they are considered "Shelly" and need to be boiled for 10 minutes? I've harvested quite a few that are either green, or have tinges of the red, but the beans inside are quite sizable.
