It is raining AGAIN. After loosing all that weight on nice days, this is something I do on rainy days.

I have a question. I have my own lavendar plant in my herb garden. Can I use the buds from that? If so, do I need to do anything, like dry them first?

I use lavender from my garden. Since fresh lavender is at least a few weeks out, I am using buds from last year’s garden.

When using lavender buds in baked things like these brownies, it doesn't matter to me if they are fresh or dry. Unlike other herbs, there isn’t a lot of difference in fresh or dry strength. (for instance in herbs like oregano you would use a Tablespoon of fresh or a scant teaspoon of dry, dry basil is all together different in flavor than fresh). Sometimes fresh will grind down quicker than dry if that makes a difference to you.

If I make lavender vanilla or extract I use fresh because that is my tradition. I don't think my recipe calls for one or the other.

Deborah ....who gets too mellow to care once that scent fills the kitchen.
