I just had to comment on this. There was an article in the paper yesterday about huitlacoche (weet-la-KO-chee) Or, as we knew it when I was a kid, SMUT. This ugly, grey fungus would infect the ears of corn and ruin the crop if not removed as soon as it appeared in the field. We children had to walk the rows and look at each ear, removing any that was tainted. A never ending job that we hated. In later years I learned that the Japenese prized it as a delicacy and paid what seemed like an outragous price for it. Now, it seems, it has become popular with the chefs in gourmet restaurants here in the Phx. area. So if any of you gardeners discover Smut on your corn, well......it's supposed to have even more healthful benefits than the corn itself. Maybe you'de want to think about that. OR NOT Smut (Corn fungus) Icon_pale

I have seen cans of it in large supermarket. Apparently it is prized in Southern America, too. I don't think I could bring myself to try it, though.
