Dill Question

1-First time growing 'bouquet' variety of dill. I know nothing about using it. Have the fluffy leafy stuff on younger plants and I think the leaves can be harvested and used in a variety of recipes -- right?

2- and I have older dill I just cut today that is flowering and is roughly 3ft. tall. I think I can dry the flower and a piece of the stem? and add them to pickles this year???

3- If I let the other flowering dill stay out in the garden, at some point I can harvest the seeds?

Your help is greatly appreciated!

Yes to all three points. You can dry the leaves and seeds ( dill weed and seed respectively). It will self seed if you let some of them go. FYI; it seeds prolifically and indiscriminately, you will find little dill plants pop up everywhere.

Thanks Herblover! One article said to harvest the flowers, actually just before it flowers. Seems like it might be hard to catch the timing perfectly right at budding and just before flowering. Hmm, any thoughts on that?? Since I'd like to know if its critical to the flavoring.

Good thread lm. I am interested in the responses as well. We use the tops for canning pickles and clip the greens for all kinds of dishes. This year, I bagged some tops that have burned brown and gone to seed and am curious how folk use the dried seeds. Thanks everyone.

When I lived in Southern California, I grew some Mammoth Dill that grew to 7'!

And I still have seed from that plant that germinated this year.

Use the green, tiny leaves for cooking. The "flower" that will eventually form at the top will dry out, producing dill seed, which you can use for future plantings, or for pickles.

I've even used these seeds in seafood dishes.

However, this year's germination of those old dill seeds was less than spectacular: one of four in a square foot. I hope that this year's harvest will provide seed for future plantings.
