Hardneck garlics send up a flower stalk in early June in northern climates and as early as March or April in warm climates. Before the stalk begins to turn woody, starts to uncoil, and begins to stand up straight, the stalk should be cut off 1/2 inch above the top plant leaf. This redirects the energy downward into the bulb.

Oh man...I'm such a hummus nut...I make it with everything and anything. Thanks so much for this recipe, llm. Can't wait for the scapes now! Altho I'm not sure about getting any if they only come on the hardneck, unless my Belgian Purple or the ones from the grocery store are hardnecks.

Between hummus, roasted, barbecued with asparagus, also want to dry some for storage, already thinking of expanding this autumn's planting!

While picking up a few things at Whole Foods just now, I saw garlic scapes for $4.99 per pound. The tips were large and rounded, unlike mine, which are thin and serpentine.

The onion scapes have small heads, although they do seem to be growing slowly.

One of the garlic scapes is starting to curl. Should I harvest these now, or wait?

Thanks for any advice or suggestions.

I took a few of my scapes last year and stuck them into the compost and the seed head continued to develop and then I had a whole bunch of garlic BULBILS which you can plant and over 2 years get LOTS more garlic.
IT is a great idea to build up your garlic stock..... if time is not an issue

I looked at the photo too fast and wondered how there were red and blue scapes... I need more sleep (due to grass pollen allergies.)

Sometimes I slice my scapes small/thin and use them raw in salads (usually chunky salads rather than leafy ones), or barely cook them and add to the rare pasta dish. Or I cut them frozen green bean size, and throw them into stir fry. I've also heard of garlic scape pesto, but haven't made it myself.

I grab my scapes close to where they come out of the garlic and pull - sometimes it breaks off right there, sometimes a little extra slides out from inside the plant before it snaps.

Thanks, Beetles, I really didn't know how to get them off....can't wait to try them.  Think I will throw them in with some of the Rana mushroom ravioli and some EVOO, maybe a bit of shredded parmy.

Scapes cut up in bean size chunks with the sugar snap or snow peas or broccoli and stir fried briefly. drooling

Turan's post made me think that it sounds good to slice the scapes thinly and saute them with greens like kale or collards or chard or whatever. Instead of garlic.

Last year at least, my huge Music bulbs were really well anchored - though they do have closer to 8" MM than 6". This spring I was able to see the roots going down past the 8" mark because the back of my bed didn't quite touch the ground (garden isn't level). I should have taken a picture.

What a Face
When I harvest the scapes I reach to the place where they are coming out of the stalk and snap them of with my hand.   Do it this way all the time.  Never have they popped out of the MM.

OK, I did pluck one, took a bite--yowwee!!!!  HOT!  Me thinks my garlic is gonna be spiceh!  LOL!

Love the recipe ideas, too, thanks!  Will sautée me up some scapes this week, and I have tons of kale and some chard is ready.

I know this is an older topic but have a wonder about my lack of keeping track.

I missed about 5 scapes and they have the bulbs - I would like to be able to use this for seed - how long should I leave it in the MM before I harvest it?  After I harvest - do I take the bulb off and dry it - and if so - what method of drying?

I hope this makes some sense.

Last year my boss gave me a big bunch of scapes that when I brought them home I found the stems too tough to cook. I threw them under the broccoli as mulch. In the fall I noticed that they had developed a bunch of little bulbils. I planted them and they gave us garlic greens and some will give us little bulbs this year.
Not very firm data to go on, GG, but a start.
