How long can you keep pickles in original container/brine?
I'm starting to make some really large batches, 55 gallons in air tight HDPE fermenting vessels that can be used for wine and beer.
This is professional equipement and the container is 100% air tight.
My pickles are ready in about 20-30 days.
How long can I keep them in there?
My pland is to take out dozens of kilos at a time, but not completely empty the container right away, just like the pros seem to do at probiotic pickle shops.
