I have been canning refrigerator pickles since I don't have a canner as of yet. I've done both kosher and bread and butter so far (tooting my little horn lol). Do I still need to use new lids since they stay cold? I would still sterilize them.

i only use fresh, new lids when i'm processing in a canner (either water bath or pressure canner). since you aren't creating a vacuum on the jars for the fridge, there is no need for new lids.

Since they are refrigerator pickles and don't have to be processed, I put mine in ice cream buckets. I can make a large batch and keep adding fresh cucumbers to it.

Last summer, I made a batch refrigerator pickles and kept them in a ziplock bag. We inhaled them, so they didn't stick around long.

Clean lids are all you need for fridge pickles.

Just remember to make larger batches than you think you need ........ because they are addictive Very Happy

Hope its ok to add another question to this thread...

How Do you make Refrigerator Pickles?
We love kosher dills So I saved up our Nalley kosher dill juice and...
the other day I dunked some spears and stuck them in the fridge.
There is no air in the bottle the spears are wedged in tight so as
not to float and the lid is on tight.
So I guess the real Question is. Am I about to kill my Family? Shocked

no, they will not kill your family. Smile i actually do that a lot--but i use whatever veggies i have that are about to go bad before they can be used--green beans are my favorite, but i like okra that way too, and mixed bits like cauliflower, onion, carrots, etc.

give them a couple of weeks to brine, then they will be delicious.

Are these plastic or glass? I have wondered if refrigerator pickles can safely be made in anything other than glass. My first time making them was last summer (hello CSA!) and I felt glass would be safer. Last week I wanted to make some but didn't have a glass container and was worried. I did some googling about it but couldn't find a direct answer.

Those who read my posts may have noticed that I google a lot but am fairly unsuccessful in getting an answer to my direct question for some reason. The logic of my brain which forms the search string does not seem to be that of an actual computer search engine!

As long as it's food grade plastic you should be just fine!

I was wanting to use my plastic containers from Emerald Nuts. I would assume they use food grade. Right? The thing that got me wondering is that you never see pickles sold in anything but glass in the store. Or at least I never have.

That's because they are processed in those containers, if you are storing them in it it's different. Plastic containers should have a grade on the bottom of them.

Here's a link about different types and what they can be used for!

When my son ran a resturant, we got dill pickles in 5 gal plastic buckets.
And the buckets that Firehouse Subs "give" away (for a $2 donation to your local fire dept) are pickle buckets.

So I must be dumb as a rock. For food grade buckets for pickles or honey, what number am I looking for? Is it number 2?

Going to have to look for that Claussen pkg in the supermarket and see what is stamped on the bottom to compare to my Emerald Nuts container.

Thanks everyone.

I am getting ready to pickle some Okra and was reading the recipies and both recipies said use dill seed. But when I went to the grocery store last night, there was no dill seed.. All the different brands of spices only had dill weed. Is dill seed the same as dill weed thinking

they are from the same plant. dill "seed" is the fruit, dill "weed" is the leaves and stem.

edited to add: dill seed, like other seeds, is a spice. dill weed, like other leaves and stems, is an herb. it does make a difference in the final flavor profile but it makes no difference at all in the processing of foods for long-term preservation.

Thank you for your answer Rowena concerning the dill seeds and dill weeds. I went to a different grocery store and was able to find dill seeds. So I think I am ready to pickle the Okra this weekend. Except my SIL wants fried Okra tonight so there may not be enough to pickle. Crud.

BTW, I heartily recommend growing a square of either dill or cilantro, as the flowers of both really bring in the bees; which benefits your other plants. In fact, as soon as the dill started flowering, the bees showed up and started working on the cucumber flowers, too. Win-win, right? Nonna
