Swiss Chard Gratin
Swiss Chard Gratin
2 bunches Swiss chard leaves, chopped (about 8 cups packed)
1 cup water
1 tbsp EVOO (olive oil)
1 tbsp butter
1 c skim milk
2 tbsp flour
salt and pepper
1/4 c Parmesan cheese, divided
1 tbsp bread crumbs
Preheat oven to 350. Place chard leaves in saucepan with water and
cook over medium heat until leaves are just tender, 3-4 minutes. Drain,
reserving 1/4 cup of the liquid. Set chard aside. In the same
saucepan, heat olive oil and butter over medium heat. When butter has
melted, whisk in the lfour until blended. Whisk constantly for 1
minute. Slowly whisk in the milk and reserved cooking liquid.
Continue cooking and stirring until the sauce thickens, 3 to 5 minutes.
Season with salt and pepper and stir in half of the grated cheese. Stir
in the cooked chard and transfer to sprayed 8x8 baking dish. Sprinkle
with remaining cheese and bread crumbs. Bake for 20 min or until hot and
bubbling. (Or, for those of us in the heat wave, you can heat until hot
in the microwave and then stick under the broiler to brown a little.)
Serve immediately or you can make it up to a day ahead stored in the
fridge.
