Has anyone canned minced garlic?
I've purchased the minced garlic in the grocery store previously & want to can some for myself since I have LOTS of garlic this year. I don't have a jar right now, so can't check the ingredients, but it did not have vinegar.
Has anyone canned minced garlic before? I am assuming it was preserved with ascorbic acid or something like that.

The contents of my jar of minced garlic says it contains garlic, water, and phosphoric acid. I'm not familiar with the last ingredient.

garlic is a low acid food, which means that it needs to be pressure canned, however the USDA recommends against canning it because they have not been able to produce adequate times and pressure measurements for it that don't cause significant loss of flavor and nutrition . storage by freezing, root cellaring, or dehydrating is recommended. it is especially dangerous to store garlic in oil at room temperature because of the risk of botulism. if you store it in oil, it needs to be refrigerated or frozen.

phosphoric acid is the same ingredient used to make soft drinks. it has been linked to lowered bone density. it is a mineral acid which is common in processed foods.

Since I already have osteopenia, I guess I better skip the phosphoric acid.

Dixie what type of garlic have you got so much of? The softnecks I grew last year have kept very well all year. They just be hanging in the pantry.

I have a mixture of soft neck & hard neck. They saved pretty well last year, but I do have a lot more this year.

We are keeping some in the freezer. A few months ago we chopped several and added some olive oil. It doesn't freeze hard, you can just scoop out a spoonful and drop in the pan...
