Garlic and Olive Relish - Condiment
Garlic and olive relish! This is super simple and is extremely versatile! I use it on sandwiches as a spread, in salads, in spaghetti and marinara as a meat substitute, and in numerous other dishes.
Ingredients:
2 - 6 oz jars of green olives with pimentos
2 - 6 oz pitted kalamata olives
1-2 heads of garlic (yes, that's heads - not cloves). I like mine really garlicky - so I use two heads in mine
Procedure:
Separate garlic into cloves and peel the cloves
Drain the brine from the olives, reserving a bit
Put the garlic in a food processor and pulse it a bit until is is coarsely chopped
Add all the olives to the food processor and pulse on low until it is finely chopped (but not pureed)
Remove to storage containers (you can pack it back in the jars the olives came in if you wish)
Yield - 3 cups
