Hi Guys & Gals.

I'm hoping to find some of you that are into canning your veg & fruit produce and also meat as a way of safely preserving it.

Here in the U K it is almost a thing of the past as most people are too stupid or too lazy or too wealthy to even think of doing it themselves.

I've looked around the internet UK wise and no one appears to sell the big stainless steel pressure canning vessels that you have over your side of the pond.

I can get the Mason or Kilner jars and the sealing rings for it

Do any of you use them ? If so can you let me have a chart of the sterilizing times per pound weight of food for as many food items as you can ?

If you can't make it as a chart can you let me know of any website that has such things .So far I've found ....

All of them have little bits but not an in depth coverage coverage .

. As a kid in the early 1950's my mum used to glass bottle then sterilize all sorts of things . Which was a massive help as we lived miles from anywhwere . when my parents died 30 years or so ago my big sis took all mums cookery and recipe books and diaries . Talkng to her a few days ago on the internet, ( She now lives in Malta ) she said she threw them all out years ago .

Amazon UK has some interesting canning books, but the pressure cookers are all small. You might try the American Amazon and see if they will ship to the UK. I have gotten some things shipped to the Philippines.

Just as a point of fact, not everything needs be pressure processed. The high acid foods such as pickles, tomatoes can be water bath processed, as well as the jams, jellies and fruit with syrups that have lots of sugar or honey. What a Face

Many thanks folks .

I've done a bit of research on the pressure canners from USA , I have friend near Fort Bragg who may look for one at a freecycle , yard sale or similar & ship over here .

eBay USA have them and appear to ship if all else fails . But I will look at Amazon USA as well as DE and Fr. as I have relatives in Germany and France

It was finding people who actually did sucessfully and ate the results that I was after .

I understand the boiling hot bath idea , have an adjustable flame nine inch propane gas burner ring out in the garage ( for melting tar ) that I can use for the hot bath or canner method and as it would be done outside, I'm happy with that because of the heat & moisture generated



Previously for my own use I've only cold bottled / preserved / cured in :- alcohol , alcohol and sugar , salt , brine , vinegars , sugar syrup , sugar , olive oil and honey before now , it is the anti botulism sterilizing path I want to follow for the meats & veg as I have to move to as free of salt diet & sugar as I can , because I've just been confirmed as a type 2 diabetic.

At present I do not have one of the big pressure sterilizers but I do have a " Prestige hi dome " pressure cooker that according to the makers in an email recieved today is suitable if I follow their instructions . A book is on the way me

I'll give it a go by making some small two ounce jars of meat paste.

I don't know, but I believe that the search box is not case sensitive. no need to use the quotation marks though. I'm glad you found it useful!! Very Happy

I found it very helpful. It should help you figure out how to preserve meat. It is possible that canning is not your best option and that a freezer might work better. I also found the Ball Blue Book really good. Good luck and happy reading.
