Apple Cider Stories?
Since the topic is topical, and the forum is slow right now:
We were invited to a family's annual 'Apple Squeeze Party' last weekend.
There were:
about 70 people
12 apple trees
2 apple grinders
2 presses
and we turned out 162 gallons of cider in less than 4 hours! And it never felt like work.
Today, I froze two gallons, canned two gallons, I'm boiling down two gallons to make apple molasses, and have two gallons left to drink fresh.
From what I've read on the net and talking to people at the party, generally speaking:
apple cider is what comes right out of the press
apple juice has been filtered so it's clear, and it's often pasteurized for shelf life
hard cider happens when the natural yeasts cause some fermentation that causes low alcohol content
apple jack is liquor made by freezing apple wine to eliminate water content
I'm no expert. Do you have apple cider stories, info, or recipes?

I have an apple cider story from college. We had gotten a gallon of apple cider. It had been drunk down to the last quart before it disappeared into a dorm fridge. Fast forward a few weeks when one of the guys took it out and said with great disappointment that cider had gone bad. There was something white in the bottom of the container. One of my roommates and I volunteered to drink it right away. Nobody would beleive us that we wanted to drink the cider. A long discussion followed by a dictonary to look up the term "mother." Was the only way they would let us drink the hard cider. Only in college would a dictionary be used as a drinking tool.

I bought some cider for Thanksgiving one year. I usually serve it warm with spices. Since the weather was actually warm (in the 50s) that year, very little was drunk. I poured what was left back into the plastic gallon jug it had come in, screwed the lid back on, and put it downstairs in the basement in the little fridge we use for overflow. It was located at the far end of the basement, so we completely forgot about it, since we didn't have any overflow for the little fridge. Then one day, several months later, I went down to that end of the basement to get something and discovered a "river" of brown gooey liquid coming from my fridge. I opened it to find the jug had blown the lid off and the cider was literally bubbling over the top and leaking out the door. It took FOREVER to get the mess cleaned up and the alcohol smell from the fermentation was overpowering. I was very light headed before I finished cleaning. :drunken:
We decided afterwards to move the fridge to the bottom of the stairs, so we would go past it to get to the laundry room several times a week.
