What to do with dill?
I have some giant dill in my SFG, but I don't really know what to do with it. We planted it hoping it would help with bugs and maybe find its way into the kitchen. How/when do you harvest it? Any simple recipes you've tried with fresh dill?
I grow weary of surfing the net endlessly . . . sorting through all the things I'm NOT looking for. So, I thought I'd ask my friends here in the forum.

I use it to make lacto-fermented dill pickles and dilly beans. I LOVE dill in egg and potato salad, and added to a little mayo and creme fraiche it's a delicious sauce for salmon (or any fish, really.)

Here's few quick ideas for fresh dill:
pattipan
- Dill butter. For corn on the cob...or boiled or roasted potatoes
- Dilly vegetable dip (yogurt + mayo + celery salt + dill). Great with and veggie and especially good with sugar snap peas or cukes.
- Add to macaroni or potato salads

- Pair with lemon on poached/baked fish

This is admittedly not the easiest thing to cook, but I really like Chicken Spinaki. It's a chicken breast stuffed with a spinach/dill/feta cheese mixture and baked in the oven. The fresh dill makes a huge difference in the taste of the dish. I don't use a recipe myself, but the one on this page looks pretty close to what I do.

Oh, and if you don't like feta cheese, you might try romano or parmesan cheese.

Dill goes great with eggs, tomatoes, potatoes, fish and cucs. Like Patty I like to make dill butter. It's so easy just let the butter come to room temp snip up the dill in very small pices and mix in as much as possible. Then back in the fridge to chill. I use it on potatoes and to cook eggs in. It's also good to spread on fish before baking with a squeese of lemon. Don't forget to dry some for use later.

Dry it and save it too. Also let it go to seed and save the dill heads for pickling. I love dill in a lot of things, on cottage cheese and especially in borscht. A garden favorite.

dill flowers are great for attracting benifical insects as well.

I have a good summer squash casserole recipe that uses cottage cheese with dill seeds - YUM! I have never grown dill but friends that do always save a few heads of seeds for me. Totally different taste than the fronds.

Spicey dilly beans, dill pickles and use it in packet grilled potatoes & onions. YUM! I also use it when I bake whitefish; butter the baking dish, place in filets, sprinkle juice of 1/2 lemon, dill weed and capers then bake. yummy.

Chopper is your borscht recipe written up anywhere. Don't forget to chop some dill fronds over your salads.

Ooh! Goosegirl, you reminded me of Cottage Dill Bread. It tastes pretty good, but the real attraction is the way it smells when it's baking!

Second the Garden Dill bread....mhmmmm...smells so good baking.
Our big use for dill is fresh dill dip for all the garden veges. Can't be beat!

I've used this recipe for years, doubling the amount of dill if I use fresh. The one I'm using now is made with sprouted wheat flour because we have a family member who can't digest wheat anymore unless it's sprouted or soured.
