I'm calling it quits on my cabbage and cauliflower that I planted in March. I planted from seed and they did beautifully - in the leaf department. It is now July 1st and all I have a huge happy leaves. Not a vegetable in sight. Maybe too much nitrogen in the soil? Maybe because we had lots of 100 degree days in late May and June? Maybe because I have no idea what I'm doing? Probably all of the above.

Anywho! I have these beautiful leaves. Are they useful for anything other than compost?

I've never grown cauliflower but broccoli leaves are really tasty. Clip off the outer leaves and cook like cabbage. But don't rip out the plants yet. At some time that plant is gonna try to propagate itself and it may put forth a small cauliflower yet.

Just because the cabbage didn't form a head doesn't mean the greenery should be wasted. Stuffed cabbage leaf recipes should be available.

Oh my gosh, that brings back memories of my Nana making 'pigs in a blanket', which she also called 'gwumkee' (I have no idea what the proper spelling is for that!). It was seasoned ground beef (or other ground meat) wrapped in a cabbage leaf and then covered in tomato sauce and baked until everything was falling apart. I didn't like the flavor much, but I LOVED the ritual around it. Smile

Your problem was probably heat.
I live in Maine and usually get good cool-weather crops because of our cool springs, but Mother Nature fooled us this year and gave us some 90 plus days some weeks ago and that finished off most of my cool crops. Only a couple of broccoli survived, none of the cauliflower, in cabbages, only a few of the red Super 80 cabbage is OK as was the Chinese cabbage, and the spinach bolted very early along with the arugula. So heat isn't a friend to any cool-weather crops.

I'll try again for a fall crop.
