Wow! Those look delicious! I have never heard of eating broccoli leaves - if they're safe, I don't see why not!
My mother is Greek - this reminds me of their stuffed grape leaves dish - dolma I believe.

Oh my goodness, NHGardner....my mother's family is Christian Lebanese and we call our stuffed grape leaves "yabrak" - loosely spelled - when I was in 1st grade and had to write my favorite food, the teacher didn't know how to spell it and no one else knew what it was! I ask for this for every birthday with Mom's homemade yogurt and cucumbers/mint/garlic (which she still warms with a wool sweater from the 1950s wrapped around the bowl). You can make the same dish with cabbage leaves and I, too, was secretly thinking about the similarities...

It will be such a sad day when the old time cooks are gone! I get my supply at the Greek festival, but that only comes once a year!

Bump. It's brassica time. What to do with all the leaves after the main broccoli, cauliflower, etc. heads have been harvested? Boffer's recipe sounds so delish. I'm also going to try a couple rolls using large bok choy leaves (not toy bok choy).
