Chicken Parmesan Foil Packets
One 12x18" HD Foil sheet per packet (per person)
Boneless chicken breasts (One per person) cut in half
1/2 c. spaghetti sauce (leftover sauce is wonderful!)
1 medium zucchini sliced (or 1 c. broccoli florets, or zucc, yellow squash, carrot and asparagus mixture)
2 T. grated parmesan cheese per packet
1/2 c. shredded Mozzarella cheese per packet
Preheat oven to 450 degrees.
Place chicken breast (2 halves) centered on foil. Season with garlic salt and italian seasoning (opt.).
Spoon 1/2 c, spaghetti cause over chicken. Top with veggies, mozzarella cheese and parmesan.
Fold up long sides of foil and double fold at the top. Roll up ends and seal. Leave room between top of foil and contents to allow for heat circulation during cooking.
Place packets on a cookie sheet and bake for 22-25 minutes in oven.
(AND...there's hardly anything to clean up afterwards!! Thanks, Reynolds!)

Re: Chicken Parmesan Foil Packets
Any thoughts on using indiviually frozen chicken breasts? Or should they be thawed first?
Sorry for the question, but this recipe sounds yummy but all I have right now is FROZEN CHX BREASTS

Re: Chicken Parmesan Foil Packets
This sounds great, and I'm supposed to be making chicken parm tonight! What great timing.
Question: Do you mean to cut the breast half in half to you end up with two thinner pieces of chicken breasts to do you just mean for us to use breast halves?
I'd imagine that you can use frozen chicken breasts. Just make sure to thaw.

Re: Chicken Parmesan Foil Packets
I thawed my frozen chicken breast mostly...it makes it easier to cut the chicken breast in half when it's slighltly frozen in center. By cutting it in half it cooks better...no pink in the thick part!
