Roasted Brussels Sprouts
My basic Brussels Sprouts recipe which leaves no sulfur taste or mushiness:
Brussels Sprouts trimmed of outer leaves, halved or quartered
rinse in cold water & drain
in a hot skillet cook some bacon, 2 or 3 slices or pancetta chopped
add a bit of olive oil then saute 1/4 cup diced or thinly sliced onion
on medium heat, pour Brussels sprouts into skilled and pan roast them, you can cover or not, until light brown and tender. (I am looking for light caramelizing).
add tsp lemon zest, maybe a little bit of lemon juice, salt and pepper to taste.
Before serving, add small amount of balsamic vinegar. you may add a bit of fresh grated parmesan to the top.
Il più squisito
you can also oven roast them.

My older kids always disliked (being nice here) eating Brussel Sprouts, but our youngest, named Russell, always ate his Russell Sprouts
