Dilly Beans--oh my, nummmmm!
About a month ago I tried the Ball Canning cookbook recipe for Dilly Beans and after letting them sit a few weeks, I cracked a jar open...... YUMMY YUMMY YUMMY!!! The thought of them actually was not appetizing at all but I am so glad I tried them. Will be making lots more!!
If you haven't tried them they are a must. Tastes just like regular pickles, only crispier! A few of the jars I sliced extra jalapeno peppers in. Can't wait to try those!

You are killing me! I just made some the other day. There is a photo in my September update for Mid-Atlantic. I added some additional spices found in a recipe for spicy dilly beans. I can't wait!

I always make dilly beans each year to give my younger daughter at Christmas. They are her favorite pickles. Alas, my green bean crop was a failure this year so no pickles for her this year.

Oh, I am so jealous! Didn't get enough beans this year to make any, and it doesn't look like the fall beans are doing so hot either. Ah well, the glories of gardening is there's always next year.

Keep in mind that I am totally new to this too, but yes, I think it needs to be a green bean. If it's a really big seedy bean, it will be seedy and probably stringy, too. Plus, I think there are some chemicals that build up in more mature beans, not sure how that would play into the canning process.

I grew kentucky wonder wax pole beans...I though I planted yardlong asian beans...but after looking at my seed packets just now I realized they are the KWWP.
I need to make better notes next time....I started a garden journal last night..so we don't have this problem in the future.

I don't see why you couldn't make dilly beans out of those. (If someone else with more experience disagrees, please chime in and say so!!)
What I meant by, 'needs to be green beans', is something in a green bean 'state', i.e. not with the bean in the pod so mature that it is ready to shell. I've had trouble with picking mine as green beans because they go past that stage quickly. Sorry I wasn't very clear.

I made mine out of Kentucky Wonder. And I wouldn't bother making them in pints---go with quart size. The beans are too big, LOL!
