One carrot or two?
I went out to get some carrots for dinner and decided to see how the Nantes are coming on.
I have NEVER grown fat carrots like this before Hope they taste as good as they look!

They tasted great! I grated them coarsely, added 2 desert spoons of olive oil, 2 des sp of cider vinegar, and few drops of sesame oil, then a handful of crushed pistachio nuts (original recipe has salted peanuts but these are just as good if not better).

Do be careful with carrots. I read somewhere that 80 percent of accident victims have eaten carrots within two weeks of their accident. You just have to love folks who come up with things like this. Must have been a "government" funded study.

within two weeks of their accident. You just have to love folks who
come up with things like this. Must have been a "government" funded
study.

Did you use the carrots raw, or cooked? I have never heard of carrots in vinaigrette before but it sounds great either way!

Yes, they were raw carrots. Very quick salad to make! Here is the original recipe

I do another one from an Indian recipe book - again raw carrots but you heat oil and put in a spoon of black mustard seed. The seeds "pop" and you pour the hot oil over finely grated carrots. Add some lemon juice and optional raisins.
