That really does look a lot like amaranth. Here is my Orange Giant Amaranth. There are several plants there, but it's the big one that stands out. For reference, the top of the trellis is 6.5-ft tall. (There are some cucumbers climbing on it, too... and if you look just to the right, some of my corn is almost as tall.)
OH wow wow. they DO look alike!
Mine don't have any side branches, except for the one that snapped in half during a storm a while back -- it send out a pair of side branches and has been stubbornly growing from that.
