zucchini pie
This is a favorite of mine, the zucchini taste just like apples.
zucchini pie with ice cream on top
ingredients
1 pastry for a 9 inch double crust pie
2 zucchini
2 tablespoon lemon juice
1 pinch salt
1 1/4 cups packed brown sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons cream of tarter
1 pinch ground nutmeg
3 tablespoons all-purpose flour
directions
peel zucchini. Cut into quarters lengthwise,then remove seeds and cut crosswise (as you would cut apple for apple pie)
toss together 4 cups chopped zucchini,lemon juice and salt. Place mixture into frying pan and cook until tender-crisp
in a separate bowl,mix together the sugar,cinnamon,cream of tartar,nutmeg and flour, add the cooked zucchini to sugar mixture and mix well
place filling into 9 inch pie crust,dot with butter, and place top crust on. bake in oven 400 degrees for 40 minutes or until golden brown.

Thanks, I just copied that into my recipe's file for when I have some. Sounds great.

My mom said she used regular white sugar instead of brown sugar in her pie, I can't edit my post now so I just wanted to add that in there. I still am amazed at how those zucchini taste just like apples, it even looks just like apples! my mom didn't tell me it was made from zucchini before I ate it, if she had I probably would not have even tried it,

Your post makes me smile. Two years ago my kids were afraid to eat ANYTHING I made because I was hiding zucchini in everything (even brownies). I made zucchini pie and told them it was apple. My oldest said it was the best apple pie ever....and after he ate two pieces he looked at me and the expression on his face was priceless as he put two and two together and asked me if there was zucchini in it. The two younger ones wouldn't try it.

OK... my pie was awful! Thought you might want to learn from what I did wrong so you don't repeat my mistakes.
- I tried a new pie crust recipe that was tough as nails and tasteless.
- We cut the zucchini in too thick pieces. For best flavor make sure they are thinly sliced so they absorb more of the sour lemon flavor during the precooking phase.
- Our pie tasted much better the next day after the flavors had a chance to meld with the zucchini.
- Really needs the ice cream. We were out the night I made it and it would have really helped.
